Around our house we always have something going on, somewhere to go or something needs tending to, be it animal, vegetable or human. Anyone that knows me knows I use my instant pots (yes I have more than one!) daily. They are perfect for me to throw a meal together in press a button and walk away till we are ready to eat. Here’s a quick easy filling nutritious dinner. I threw together in about 10 mins on a busy afternoon. For the record I’m not one to measure and weigh ingredients. I cook by touch taste and smell. Food just like anything has a soul you just have to connect with it.

Instant Pot - Ham, Green Beans & Baby Red Taters

1 Smoked Ham Hock

2-ish lbs of baby red taters

2-ish lbs of fresh green beans

Tsp of Montana steak seasoning

Tsp of minced onions

Using my 8qt Instant Pot I laid the frozen ham hock in and covered it 2/3 with water. Snapped tips off fresh green beans and tossed them in. Washed baby reds and quartered them and in they went. Threw in my seasoning and locked down the Instant Pot.

Set it for 30 mins on High pressure and walked away. The Instant Pot did its magic cooking trick and kept it warm for 2 hours after it was finished.

When we were ready to eat I pulled out the Ham hock, the meat was falling off the bone so was very easy to pick off. I separated all the meat from the fat and bone and added it back in with the green beans and taters. We served it with buttered hamburger buns because “hey why not”!
